Hearty Vegetable Soup

Introduction

Yummy and thick vegetable soup that even the kids will like! Yummy and thick vegetable soup that even the kids will like!
Number of Servings: 8

Ingredients

    2 T Olive Oil
    2/3 cup sliced leeks (white part only)
    8 oz chopped fresh mushrooms
    7 cups vegetable broth
    2 cups butternut squash peeled, seeded and chopped
    1.5 cups zucchini, chopped
    1 cup dry barley
    1/2 tsp salt
    1/2 tsp dried thyme
    1/8 tsp black pepper
    1 cup fresh baby spinach

Tips


Directions

In a soup pot, heat olive oil. Add leeks and stir until tender. Add mushrooms and cook for 5 minutes more. Add broth, squash, zucchini, barley, salt, thyme and pepper. Bring to boil and then reduce heat. Simmer for 20-30 minutes or until barley is tender. Stir in spinach just until wilted.
