Detox Soup

Number of Servings: 8

Ingredients

    1 leek, chopped and cleaned
    2 garlic cloves, crushed
    4 carrots sliced
    4 stalks celery diced
    3 rutabagas, peeled and diced
    8 C vegetable stock
    2 large tomatoes, diced
    2 C garbanzo beans (or beans of choice)
    2 bunches kale, pulled from stems in small pieces
    black pepper
    1 tbsp olive oil

Directions

Heat oil in pan. Add leek and garlic and cook about 5 minutes stirring occassionally. Add carrots, celery and rutabagas; cook another 3 minutes. Add stock, tomato, beans; simmer over low heat for at least an hour.

15 minutes before serving, add kale. Top with fresh cracked pepper and 1 Tbsp parmesan cheese (not included in calorie count)

Serving Size: Makes 8 one cup servings
