Yogurt with a Cucumber & Red Pepper Side Salad/Low Carb Breakfast

Ingredients

    1 c [8 oz] yogurt, low fat
    1/2 tsp stevia, optional

    3 baby cucumbers, skin on, sliced (or 1 med, peeled)
    1 red pepper, seeded and sliced
    1 tsp olive oil
    2 lemon wedges
    salt and pepper to taste

Directions

Make a cucumber salad with 3 baby cucumber, with the skin. Slice the ends off, then cut them in half, then in sticks to match the red pepper slices. De-seed the red pepper, remove all white pith, and slice into strips. Put on top of a bed of romaine lettuce, shredded, then add 1 tsp of olive oil and the juice from 2 lemon wedges. Add salt and pepper to taste.

Prepare an 8 oz bowl of fat free yogurt to accompany your salad, and sprinkle with stevia if desired.

Serving Size: 1 adult portion
