Spinach Rolls

Ingredients

    Onions, raw, .25 cup, chopped
    Garlic, .5 clove
    Olive Oil, 1 tbsp
    Salt, 1 tsp
    Pepper, black, .125 tsp
    Spinach, frozen, 1 package (10 oz) yields
    *White Rice, medium grain, .5 cup
    Mozzarella Cheese, part skim milk, 6 oz
    Parmesan Cheese, grated, 3 tbsp
    Egg, fresh, 1 large
    Milk, nonfat, .125 cup
    *PILLSBURY, Grands Crescent Rolls, 2 cans

Directions

Heat oven to 350 degrees. Grease 9-inch pie or round pan. In a small skillet cook onion and garlic in oil until tender. Stir in salt and pepper; remove from heat. In a medium bowl, combine spinach, rice, 1 cup o fthe mazzarella cheese, parmesan chease, egs and milk. Stir in onion mixture. Separate doaugh into 8 triangles per can (one an of crescents should give you 8 rolls). Place 1/3 cup spinach mixture on shortest side of each triangle. Roll up; starting at shortest side of triangle, gently wrapping dough around spinach mixture and rolling to opposite point. Place rolls point-side down in prepared pan.

Bake at 350 degrees for 25-30 minutes; remove from oven. Sprinkle with remaining 1/2 cup mozzarella cheese; return to oven. Bake 5 minutes longer or until cheese is melted and rolls are golden brown.
