Ingredients

    12 cherry tomatoes, cut in half
    2 cups spinach, baby, pre-washed
    1/2 c celery, chopped
    1 red pepper, large, cleaned, sliced
    1 c zucchini, diced

    1/2 c cottage cheese, non fat
    1/4 roasted red pepper puree*

    100 grams greek yogurt, 2%
    1 tbsp cocoa powder, unsweetened
    1 tsp stevia (optional)

Directions

To make the salad dressing, blend the cottage cheese and roasted red pepper sauce* in a blender jar or with a hand immersion blender. Set aside.

Put the spinach in a bowl. Chop the celery, red pepper and zucchini. Add to the spinach. Cut the tomatoes in half, and add to the spinach bowl. Pour the dressing over and mix well.

In a small blender, mix the yogurt, cocoa powder and stevia until very smooth. This can be done by hand with a fork, it just takes a little longer.

Serve the salad and yogurt.
