2 cups cooked cubed or shredded chicken
1 cup chopped carrots
1 cup chopped celery
1 cup chopped mushrooms
1/2 cup chopped onion
1/2 bag of frozen peas, thawed
1/2 bag of frozen broccoli, thawed
2 Tbs olive oil
1 Tbs unsalted butter
2 cloves minced garlic
6 cups low sodium chicken broth
2 cups water
3/4 cup uncooked quinoa
1 tsp basil
You can do as I do and cook two large chicken breasts in boiling water. When done, debone, remove skin, and chop or shred. Add only 4 cups of prepared chicken broth to the broth made by the boiling chicken. Add up to 2 cups of water if needed. This is less expensive than having to buy extra broth and canned chicken.
Serving Size: Makes 6 large bowls of soup
