Warm Spinach Salad with Salmon*/Low Carb

Ingredients

    6 c spinach, baby, pre-washed
    1/2 c chicken broth*
    1/2 tsp nutmeg
    1 c mushrooms, sliced
    1 c red peppers, sliced
    cooking spray
    2 tbsp chives, chopped
    2 tbsp dill, chopped
    1 oz poached salmon*
    4 oz [8 tbsp] yogurt

Directions

Measure out the salmon from the container which holds the pre-cooked poached salmon*. Heat a non-stick pan to med-high, then coat lightly with cooking spray. Add the mushrooms and peppers and stir fry constantly, until they start to brown and are softened. Add 2 tbsp chicken broth* at a time to prevent sticking. Set aside.

In a pot large enough to hold the spinach, place the remainder of the chicken broth, then the spinach, then the nutmeg. Bring to a boil and cook until the spinach just wilts, about 2 minutes. Add the mushrooms, peppers, chives, dill and yogurt, and stir well. Let yogurt warm but don't boil. Put the warm spinach "salad" on a plate, sprinkle with lemon juice, and lay the flaked salmon on top. Serve at once.
