Ingredients

    4 baby yukon gold potatoes, sliced
    1 tsp olive oil
    2 red peppers, diced
    2 poblano peppers, diced
    1 C chopped onions
    S+P
    3 eggs
    5 egg whites
    1.5 oz goat cheese

Directions

preheat oven to 375
in skillet, saute potatoes in olive oil
spray 6 count jumbo muffin tin w spray
line muffin cups w sauteed potatoes
saute peppers and onions until soft, season w S&P, layer over potatoes
beat eggs and egg whites, pour over veggies
top w crumbled cheese
bake for 25-30 minutes or until puffed and set
