Ingredients

    Black eyed beans, 83.5 gram(s)
    Onions, raw, 1 small
    *Peppers, sweet, red, fresh, 1 large (2-1/4 per lb, approx 3-3/4"
    *Peppers, hot chili, red, fresh, 2 pepper
    Garlic, 2 cloves
    *Canola Oil, 1 tbsp
    *Extra Virgin Olive Oil, 0.25 tbsp
    Pepper, black, 1 dash
    Maggi beer chicken stock, 0.5 cup
    Egg 1

Tips

This is a Nigerian delicacy which has been modified to reduce its calorie. It can be served along side salads, meats and sea food.


Directions

Presoak beans in a refrigerator for 4 to five hours. Rinse properly without getting rid of the skin.
Blender beans together with the onion, peppers and garlic into a very smooth batter
Pour into a mixing bowl, beat into the batter the Maggi chicken stock, black pepper, egg, black pepper and oils
Pour into a standard 8.5 *4.5 bread pan, cover with foil paper and steam for 90 minutes.
The moin moin is coke when a knife goes through it and is clear when removed.
