Beans and Greens

Number of Servings: 4

Ingredients

    1.5 cups pinto beans
    2 cups collard greens
    12 small mushrooms, sliced
    1 tsp garlic powder
    2 TBS cider vinegar
    few drops hot sauce (optional)

Directions

Combine all ingredients in a saute pan and cook just until greens are wilted and everything is heated through.

Can be made with any type of beans and greens. If using canned beans, you can rinse them first to reduce the sodium content.

Makes 4 servings of 3/4 cups each.
