Chicken Shish Kabob's with Hot Chile Pineapple Sauce

Ingredients

1.25 lbs chicken, skinless boneless, cut into chunks
1/4 cup greek yogurt, plain, non-fat
1/2 tsp. lime juice
1/2 tsp sriracha sauce
1/4 tsp. salt
1/4 tsp. pepper
3 pineapple rings, cut into 1" pieces
1 large green or sweet bell pepper, cut into chunks
1/2 medium onion, cut into chunks
2 tbsp. hot chile pineapple grilling sauce (Archer Farms)or your favorite bbq sauce
Tips
Directions
In a small bowl add greek yogurt, lime juice, sriracha sauce, salt and pepper. Mix until combined. Add chicken to a shallow bowl or large ziplock bag. Add yogurt mixture and mix until all the chicken is coated. Place in the refrigerator and marinate from 30 minutes up to 8 hours.
Skew chicken on skewers, rotate between peppers, onions and pineapple. Note: If you use wooden skewers soak in water for 30 minutes.
Place skewers on grill, brush with grilling sauce or BBQ sauce and rotate every 3 minutes, until chicken is done!
