    2 lbs. chicken thighs
    1.5 cup coconut milk
    1 tbsp brown sugar
    1 tbsp soy sauce
    1 lrg onion, chopped
    1 green pepper
    1 red pepper
    2 sweet potatoes, peeled and chopped
    1/2 eggplant, peeled, seeded, chopped
    curry powder

Directions

Throw together in slow cooker
