1 TBS. ghee
2 medium onions, chopped
1 jalapeno pepper, finely chopped
5 plum tomatoes, diced
1 bunch kale, thinly sliced
1/4 cup water
2 TBS. lime juice
1/4 tsp. salt
1/4 tsp. black pepper
Add onions and jalapeno pepper, cook until soft, about 5-8 minutes.
Add tomatoes and cook for ten more minutes until saucy.
Add kale, water, lime juice, salt and black pepper. Cook until kale is tender and flavors combine, about 10-15 more minutes.
Serving Size: Makes four servings.
