1-1/2 cups 100% whole wheat flour
1/4 CUP Teff Four(Bob's red mill)
1 cup unsweetend cocoa(Hershey's special dark
1-3/4 cups granular Splenda
1-1/2 teaspoons baking soda
2 teaspoons baking powder
2 teaspoons ground cinnamon
1 cup fat free milk
1/2 cup unsweetend applesauce
6 large egg whites
1 teaspoon pure vanilla extract
5 portions Jello Chocolate pudding sugar free snack packs
1-1/4 cup boiling water
Preheat oven to 350 degrees F
Combine dry ingrediants in a large mixing bowl.
In food processor puree applesauce,vanilla, milk,egg whites and chocolate pudding and add to dry ingredients Add boiling water and mix at medium speed for 2 minutes.
Spray mufffin tins with cannola oil or use paper muffin cups. Fill muffin cups just to the top.
Bake at 350 for 16 minutes or until toothpick inserted into muffin center comes out clean.
Remove immediately from muffin tins and cool
Top with sugar free whipped cream or whipped topping or fruit as desired. Calories do not include topping.
