Rumbamel's Pumpkin Chili c/o EMBUSBY

Introduction

I love making recipes with pumpkin and when I saw a chili recipe, I just had to try it. I had to change a few things because I didn't have the ingredients. No salsa, so used diced toms with grn chiles, no extra beans so used chili beans and extra black beans, left out the zuccini. Very thick and not the normal chili you are used to. Ingredients

    -1 1/2 lbs lean to extra lean ground beef, browned and drained weill
    -1 1/2 C chopped onions
    -1t garlic powder

    -2 cans black beans, drained and rinsed, about 3 1/2 C
    -1 Can chili beans w/out meat I got Walmart brand and it measured about 1 1/2 -1 3/4 C
    -1 can, 15 oz, packed pumpkin
    -1 can diced tomatoes w/green chiles, 14.5 oz
    -1 can petite diced tomatoes, 14.5 oz
    -8 oz frozen corn, defrosted, about 1 1/2 C
    -2 T chili powder
    -1 T Wondercocoa or other cocoa powder

Directions

---Brown and drain the meat well. Add the chopped onion and garlic powder and cook on med/low for another 2 minutes.

---Add all the remaining ingredients to the large pot and stir well. Stir in your meat and onion mixture. Simmer over low heat for about an hour stirring often or put in a crock pot on low for the day.

---Makes 11 servings of 1 C each.
