1 Tbsp olive oil extra virgin .5 large onion chopped 5 gloves chopped garli 1 cup fresh mushrooms chopped 1 lb ground turkey 2 15oz cans Veg All mixed vegetables drained 1 14.5 oz Italian diced Tomatoes 1 14.5 oz regular diced tomatoes 1 can11.5 oz Vegetable juice ( GV ) 1/4 cup canned peas
Heat olive oil in large pan, add chopped onions, garlic, add ground turkey and brown, add mushrooms. At this time I add the spices such as 1 Tbsp Italian Seasoning, 1 tsp ground cumin, salt and pepper. Add canned vegetables, peas, diced tomatoes (both cans) and vegetable juice. Bring to boil, reduce heat and simmer for aprox. 15 minutes. Server over couscous, pasta, brown rice or what ever you like. This is a good way to clean out the frig of left overs.
