    1 Tbs canola oil
    1/2 c chopped onion
    2 cloves crushed garlic
    1 inch ginger (I listed this as 3 teaspoons)
    1/2 cup chopped green bell pepper (can slice rather than chop)
    1 lb ground turkey (the original recipe calls for ground beef)
    *Fresh green beans (see tips)
    1 tsp lemon juice
    grape or cherry tomatoes, sliced in half
    1/2 can coconut milk (I said 1/2 cup above)
    2 tsp soy sauce


* local fresh green beans here on Guam are very, very long. I listed 2 cups (as I had to list something) in the recipe. I cut these beans into approx 4 inch pieces and like to serve this dish with green beans being the main ingredient of this meal.


Brown onion, green pepper, ginger and garlic in canola oil. Add ground turkey and saute until brown. Add green beans and cook 7-10 minutes. Add tomatoes, lemon juice, coconut milk and soy sauce. Serve hot with steamed rice.
