Broccoli & Grape Salad

Number of Servings: 4

Ingredients

    3 cups broccoli - steamed and cut into florets
    1 cup seedless grapes, coarsely sliced
    1/4 cup finely chopped red onion
    1 medium Kohlrabi, raw - peeled and diced
    Dressing:
    1/4 cup apple cider vinegar (to 1/2 cup)
    2 Tbsp light sour cream
    2 Tbsp light Miracle whip
    1 finely diced garlic clove
    1 Tbsp maple syrup

Directions

Start water in steamer.
Separate Broccoli into florets.
Whisk together dressing ingredients to blend - add more cider vinegar if too thick.
Steam broccoli - just til al dente - about 3 to 5 minutes.
Plunge immediately into cold water.
Coarsely slice grapes.
Peel and coarsely chop Kohlrabi.
Place all veggies into bowl, pour dressing over and blend.

Serving Size: makes 4 1-cup servings
