1 tbsp olive oil (or just use non stick pan without any oil)
1 lb ground turkey
1 medium onion, chopped
1 green bell pepper, chopped
1 zucchini (not a giant one!), chopped
2 jars (650 ml each) of pasta sauce [my favourite sauce is classico red wine and herb]
My favourite way to serve this is over Spaghetti squash. [For those who haven't cooked spaghetti squash before, DO NOT BE SCARED! It is super easy... cut squash in half. Remove seeds. Add a small amount of olive oil, salt, and pepper. Cook in oven at 375 for about 45 min to 1 hour. it is done by the time your sauce is done!]
Add veggies and cook until softened.
Add jars of pasta sauce and bring to simmer.
Simmer for about 30 mins.
