Low Carb Chicken Enchiladas

Introduction

Chicken Enchiladas - for those of you not on low carb, this is the 'stuffing' put a spoonful in a tortilla and it's superb! Chicken Enchiladas - for those of you not on low carb, this is the 'stuffing' put a spoonful in a tortilla and it's superb!
Number of Servings: 8

Ingredients

    2 Chicken Breast
    1 Package of Cream Cheese
    About a cup of salsa
    1 Small Onion
    About a cup of shredded cheese, any kind.

Directions

Cook Chicken, cut up onion and cook with chicken, Shred chicken when almost cooked fully (or if you do not have a shredder, wait until fully cooked and pull apart with two forks) Add package of cream cheese and salsa, mix together. Top with Shredded Cheese. Wrap in lettuce leaf or put on top of salad.

For those NON Low Carb-ers. Put a spoonful in a tortilla shell, wrap, put in a baking dish (I use a clear glass 13x9, because I use Burrito shells) Add cheese to top and bake at 350 for about 5-10 minutes. It's superb.
