Spinach & Cheese Squares, Cow-milk Free

Introduction

Modified recipe with no cow milk products. Delicious for breakfast or lunch. Modified recipe with no cow milk products. Delicious for breakfast or lunch.
Number of Servings: 8

Ingredients

    2-10 oz pkgs frozen chopped spinach
    1 lb. soft tofu, drained & crumbled
    1/3 c feta cheese, goat
    8 oz egg substitute
    1/4 c chopped scallions or onion
    3 T olive oil
    1 T all purpose flour
    1/2 tsp pepper
    1/2 tsp dill
    2 T grated pecorino Romano cheese

Tips

Can substitute other spices and cheeses.


Directions

Preheat oven to 350 degrees F. Thaw, drain & squeeze spinach to remove liquid. In a large bowl, mix everything except the Romano cheese. Grease a 12" x 8" pan or baking dish. Pour mixture into pan and even out. Sprinkle Romano on top. Bake in 350 degree oven for about 1 hour. Cool, then cut into 8 servings.
