Vegetarian Meatballs

Number of Servings: 8

Ingredients

    1 c grated Parmesan Cheese
    a pinch of Sage
    4-6 eggs
    1 small onion
    1 cup crushed Saltine crackers (1 sleeve)
    1 cup Pecan meal


Tips

I used no salt saltine or ritz crackers to lower sodium content, since Parmesan cheese has plenty of salt; I'm also baking them for about 30 -45 minutes to lessen oil use


Directions

1 In a food processor grind pecans to a fine powder
2. Finely chop onions and garlic
3. Mix all ingredients together and form into 1 inch balls.
4. Fry in hot oil until browned.
5. Eat plain, in a sandwich or add to spaghetti sauce and pour over pasta. Enjoy!
