Hot Spinach Meal

Introduction

Just what I had on hand today to make a quick lunch. It made enough for dinner also, and MAYBE lunch again tomorrow! Just what I had on hand today to make a quick lunch. It made enough for dinner also, and MAYBE lunch again tomorrow!
Number of Servings: 4

Ingredients

    1 lb spinach, chopped
    1/2lb mushrooms
    1 onion
    2 cans diced tomatoes
    1 can kidney beans
    3 cloves garlic
    1 t coconut oil
    Spices to taste

Tips

Try some cumin, red pepper or a jalapeno if you want to add some pizazz


Directions

Saute onions in oil.
Add the rest of the ingredients. Cover and simmer until desired tenderness. About 10 to 20 minutes, adding water if you want a more of a soup.
