2/3 c. egg substitute or egg whites
2/3 c. 2% cottage cheese
24 g. Show Me the Whey protein, vanilla
1 T. Coconut Secret coconut flour
1/4 tsp. baking soda
Mix all ingredients in blender. Let stand 5 min before cooking on greased skillet.
I have found that egg substitute makes a more tender pancake than egg whites.
The pancakes are even better and less eggy tasting if the better sits in the fridge a few days. I usually make a double batch and have successfully held it in the fridge for 6 days.
Makes 2 servings of 2 pancakes.
