    1 large cabbage leaf (32g)
    2 button mushrooms (54g)
    2 eggs
    1 egg white

    nonstick skillet
    pair of tongs
    sharp knife pot of water
    salt/pepper

Tips

This is more an idea than a recipe. If you can get your hands on collard leaves to sub in for the cabbage, they're higher in calcium. You can use tofu instead of eggs.

You can blanch a batch of leaves, refrigerate, and use for chickpea salad or chicken salad.
