whole wheat pumpkin chocolate chip muffins(4 dozen)

Ingredients

1/2 cup brown sugar
1/4 cup canola oil
2 eggs
1 1/2 cups mashed cooked pumpkin
1 cup whole wheat flour
1 cup white flour
1 tsp baking powder
1 tsp baking soda
1 tsp cinnamon
1/4 tsp salt
1/4 tsp nutmeg(optional)
1/2 cup chocolate chips, crushed or mini chocolate chips

Directions
preheat oven to 400F. grease a mini muffin pan or use paper liners.
in a large mixing bowl, combine sugar, oil and eggs. stir for about 3 minutes using a wooden spoon or an electric mixer. add pumpkin mash and stir for another minute.
in a separate mixing bowl, combine the flours, baking soda, baking powder, cinnamon, salt, and nutmeg(if using). Add the dry ingredients to the wet a little at a time until fully combined. stir in the chocolate chips.
fill each muffin liner about 3/4 full of batter. bake for 20-25 minutes.
