Pumpkin and cranberries quick bread

Introduction

A nice way to use your leftovers from Halloween. I was inspired by a recipe on www.simplyrecipes.com and made my own version. A nice way to use your leftovers from Halloween. I was inspired by a recipe on www.simplyrecipes.com and made my own version.

Ingredients

    3 cups All-purpose flour
    1 tsp Salt
    1.5 cup Brown sugar (not packed!)
    2 tsp Baking Soda
    2 cups Pumpkin puree
    1/2 cup Plain greek yogurt (0%)
    1/2 cup Unsweetened Applesauce
    4 eggs, beaten
    2 tsp Ground Nutmeg
    2tsp Ground Cinnamon
    2 tsp Allspice
    1 tsp Ground ginger
    1/2 cup Chopped Walnuts
    1 cup Frozen whole Cranberries
    1/4 cup Oatmeal

Directions

1. Preheat oven to 350F (180C). Sift together the flour, salt, brown sugar, and baking soda.

2. Mix the pumpkin, yogurt, applesauce, eggs, water, and spices together, then combine with the dry ingredients, but do not mix too thoroughly. Stir in the nuts and cranberries.

3. Pour into two 9x5x3 inch loaf pans, prayed with non-stick spray. Sprinkle the oatmeal on top of each loaf. Bake 50-60 minutes until a thin skewer poked in the very center of the loaf comes out clean. Turn out of the pan and let cool on a rack.

Serving Size:2 breads, 12 slices each
