Ingredients

    Cinnamon, ground, 1 tbsp
    Nutmeg, ground, 0.25 tsp
    Salt, 1 tsp
    Carrots, raw, 1 cup, grated, shredded
    Baking Powder, 1 tsp
    Baking Soda, 1 tsp
    All-Purpose White Flour, 1.50
    Pure Vanilla Extract, 2 tsp
    Egg, Large, 1 serving
    Chocolate Chips, .5 cup
    Bran Flakes, 1 cup (unsweetened, cereal)
    Yogurt, Yoplait Vanilla, Fat Free, 6 oz

Tips

I pureed the carrot and added to the wet ingredients
much easier to mix.
Can add raisins too.

Directions

Preheat oven to 350
Mix dry ingredients except bran flakes and choc chips together and set aside.
mix wet ingredients together;
stir in dry ingredients.
add in bran flakes and choc chips last.

Bake 350 for 20 minutes in muffin tin sprayed with Pam or lined with paper cups.
