HEALTHIER LASAGNA

Ingredients

    2 NO BOIL LASAGNA NOODLES
    1.5 CUP PART SKIM RICOTTA CHEESE
    3 OZ PART SKIM MOZZARELLA
    4 TABLESPOONS ROMANO GRATED CHEESE
    1/2 CUP EGG SUBSTITUTE
    1/2 PKG FROZEN CHOPPED SPINACH, DEFROSTED AND ALL WATER REMOVED
    SALT AND PEPPER TO TASTE
    1 CUP MARINARA SAUCE

Directions

MIX TOGETHER THE RICOTTA, MOZZARELLA, ROMANO CHEESE, EGG SUBSITUTE, SPINACH, SALT AND PEPPER.

IN A 9" LOAF PAN POUR 1/2 CUP OF MARINARA SAUCE. THEN PLACE ONE LASAGNA NOODLE. THEN PLACE THE CHEESE MIXTURE, TOP WITH THE SECOND LASAGNA NOODLE. PLACE 1/2 CUP MARINARA ON TOP AND SPRINKLE WITH 1 TABLESPOON OF ROMANO CHEESE.

COVER WITH FOIL AND BAKE FOR 45 MINUTES; REMOVE FOIL AND BAKE ADDITIONAL 10-15 MINUTES.

LET IT REST FOR 15 MINUTES BEFORE SERVING.

SLICE INTO 4 SERVINGS.

OPTIONAL: IF YOU LIKE A MORE VEGGIE DISH, USE THE WHOLE PACKAGE OF SPINACH OR ADD ANOTHER VEGGIE OF YOUR CHOICE TO THE 1/2 PKG OF SPINACH.

SERVE WITH A TOSSED SALAD....DINNER'S READY!
