Bran Muffin

Number of Servings: 12

Ingredients

    1 cup whole wheat flour
    2 teaspoons baking powder
    1/2 teaspoon baking soda
    3/4 teaspoon salt
    1 1/2 cup bran
    1/3 cup lightly-packed brown sugar
    1/2 cup raisins (can use dates)
    1 beaten egg
    1 cup sour milk
    2 tablespoons of coconut oil (or vegetable oil/melted shortening)

Directions

Preheat oven to 400

Blend or sift together.
1 cup whole wheat flour
2 teaspoons baking powder
1/2 teaspoon baking soda
3/4 teaspoon salt

Blend in
1 1/2 cup bran
1/3 cup lightly-packed brown sugar
1/2 cup raisins (can use dates)

Make a well in centre of dry ingredients. Combine and add

1 beaten egg
1 cup sour milk
2 tablespoons of coconut oil (or vegetable oil/melted shortening)

Stir only until combined (batter should be lumpy). Fill greased muffin cups two-thirds full. Bake in preheated 400 oven for 20-25 minutes.

Serving Size: Makes 12 medium-sized muffins.
