Hamburger Zucchini Skillet

Number of Servings: 4

Ingredients

    3/4 pound lean ground beef
    1/2 cup chopped onions
    1/4 teaspoon black pepper
    2 small or 1 medium zucchini, split & sliced thin
    2 beef bullion cubes
    1 can (10 oz) dice tomatoes, not drained
    1 can mushrooms, not drained
    1 teaspoon minced garlic
    1 1/2 cup skim milk
    1 1/2 cup macaroni (shell or elbow)
    2 Tablespoons cornstarch

Tips

You can use lean ground turkey in place of the beef, but I like the beef best


Directions

Cook beef and onions until beef loses its color. Add next 8 ingredients. Bring to a boil, cover and simmer for 10 minutes, stirring a couple of times. Add cornstarch, stir and simmer 5 more minutes. Turn off and let stand 5 minutes.
