Turkey Chili

Introduction

This is my mom's recipe but I took out the beans, used ground turkey instead of beef and added the carrots and spinach to boost the nutrient content. You can serve with macaroni, noodles or cheese - the possibilities are endless! Ingredients

    20 oz. Jennie-O Lean ground turkey
    1 cup chopped onion
    1 tsp. minced garlic
    1 cup carrots
    1 cup fresh spinach
    1 large can whole tomatoes
    2 small cans petite diced tomatoes
    1 cup water
    1 tbsp. chili powder
    1 tbsp. salt
    1 tbsp brown sugar
    1/4 tsp. red pepper flakes

Directions

Place ground turkey, onion and minced garlic in pan and fry until no longer pink, drain grease. In blender, blend can of whole tomatoes. Add all tomatoes to turkey. Add 1 cup of water, carrots and spinach to blender and blend together. Add to pan. Add spices. Mix everything together. Bring to boil. Lower heat to simmer and simmer for 20-30 minutes.

Serving Size: Makes about 10 servings
