Salmon Patties* with Red Pepper Sauce* and Zucchini Noodles*/Lunch or Dinner Low Carb

Ingredients

    1 1/2 c zucchini noodles* base recipe
    1/4 c red pepper sauce* base recipe
    2 salmon patties* base recipe

Directions

Prepare the Zucchini Noodles* first, and set aside the "noodles" to drain.

Mix the red pepper sauce ingredients (red pepper puree*, jalapeno puree*, garlic puree*, chicken broth*) and set aside.

Prepare the salmon patties and begin to cook.

When the salmon patties are in the pan, cook the zucchini noodles, drain, cover, set aside and keep warm. Or, if you are planning to serve cold follow the instructions in the Base Recipe.

When the patties are cooked, place 2 patties on the serving plate, and reserve 2 patties for another use. Add the red pepper sauce to the same pan the patties were cooked in and bring to a boil. Simmer 1 minute, then pour over the patties. Add the zucchini noodles to the plate and serve immediately.

To serve as a cold lunch: pack the salmon patties and sauce in a container with a lid. Wrap the cold zucchini noodles in plastic wrap, and place in the container over the salmon patties. Serve everything cold. Add a little freshly ground sea salt if your diet allows.
