Maple Orange Salmon

Submitted by: PERIDRAGON

Introduction

A delicious and easy restaurant-quality salmon dish full of protein and nutrients. Prepare ahead in no time and impress dinner guests! It's practically foolproof and the technique can be used with other marinades, including store-bought ones, with similar results. I have another recipe in the database called Citrus Rosemary Salmon that is another option for the same technique. A delicious and easy restaurant-quality salmon dish full of protein and nutrients. Ingredients

Four salmon fillets, about 110g (1/4 lb) each
1 tbsp canola oil (needed to help the fish absorb the flavours)
    2 cloves garlic, minced
1/4 cup real maple syrup (not the fake stuff!)
    1/4 cup low-sodium soy sauce
    2 medium oranges

Tips

The best thing about this recipe is the ability to prepare it in advance. If you have company coming, prepare it ahead in a glass baking dish and let it marinate in the fridge until it's almost dinnertime, then let it sit out while the oven preheats to bring it back to room temperature and bake. The other great thing is that it is harder to dry out the salmon in cooking because the parchment paper holds in the moisture. This means perfectly cooked salmon every time with little fuss!

Directions

Measure oil, maple syrup, and soy sauce into a small bowl. Add minced garlic. Zest one of the oranges and add zest to bowl. Squeeze zested orange into the mixture to add fresh orange juice and stir.

Cut the other orange into 8 slices and put aside. Place salmon fillets on generously-sized individual pieces of parchment paper on top of a cookie sheet or glass baking dish and make a few shallow cuts in the top of each to help the marinade penetrate the fish. Spoon 1/4 of the marinade onto the top of each fillet and top each with two slices of orange. Fold parchment paper securely around each fillet, flip over so that the folded-up side is down, and let sit to marinate for 10 minutes while oven preheats to 400F.

Bake salmon in preheated oven for 15 minutes. Let cool for 5-10 minutes, then flip packets of salmon over and slide fillets with orange on top out of parchment paper packets and onto plates for a real restaurant-quality look. Serve with rice and vegetables.
