Ingredients

1/3 cup sugar*
3 Tbsp Minute Tapioca
3 c 2% Milk *
1 large egg
1-1/2 tsp vanilla
Tips
If using *
1/4 Cup sugar

Directions
Mix all ingredients, except vanilla, in a microwave dish -(make sure dish is big enough that pudding will not over flow when boiling - place bowl on plate in microwave)
Wisk together all ingredients except vanilla
Let ingredients sit for 5 minutes before cooking
Using Microwave - cook on high for (6 - 7) 2 minute intervals - stirring well with wisk after each interval.
Boil for 1-2 minutes
Remove from heat
Stir in vanilla
Place into serving dishes - 3/4 Cup / serving
Serve warm or chilled
Pudding will thicken as it cools.
