Pasquale's chicken rice soup

Ingredients

    12 oz. cooked boneless chicken thighs

    5 cups chopped raw onions
    1 cup chopped raw celery
    3 cups chopped raw carrots
    5 cups chicken broth from crock pot cooked thighs
    2 cups water
    1 tbs black pepper
    1 cup brown rice, cooked

Tips

You could add all ingredients back to the crock pot and cook for two or more hours until done. Strain the broth and let get cold and then skim off the fat.


Directions

Crock pot thighs. Remove skin and bones. Add all ingredients except chicken and rice to pressure cooker and cook for 6 minutes at 15 lbs pressure. Add chicken and let cool. Put in refrigerator overnight to seal in all the flavors.

Serving Size: makes 12-1 cup servings
