1 pound ground chicken
4 cups beans, drained
28 oz can crushed tomato (low sodium)
1 red onion, chopped
1 green pepper, chopped
2 tomatoes, chopped
1 apple, chopped
2 adobo peppers and 2 T sauce
1/2 c corn kernels
1 T chili powder
1 t cumin
1/2 T cinnamon
This can easily be made vegetarian by omitting the chicken. When I make it, I put all the ingredients in the pot except the chicken and mix well. Then, I spoon out enough to serve the family for Meatless Monday (for me that's a quart jar full) and freeze that. Then, I add the chicken to the stuff left in the pot and set it to simmer. I make the Meatless Monday version a couple of weeks later and simmer it for an hour without meat.
