Pumpkin Butter

Number of Servings: 12

Ingredients

    One 6-7 inch pie pumpkin seeded and cut into wedges.(will taste the same with a jack o lantern pumpkin, but it will make a LOT!)

    3/4 cup granulated sugar. (You can also substitute Splenda)

    1 Tbs. ground cinnamon

    1/8 tsp ground cloves

    1/4 tsp ground ginger

    1/4 tsp ground nutmeg

Directions

Wash pumpkin and cut into wedges and put in a microwave safe dish.
Cover with saran wrap and microwave for about 15 minutes.
Let sit until cool enough to handle.

Once cooled, pull the skin off. (Don't worry, it comes off pretty easy.)

Puree pumpkin and put in a medium saucepan with all other ingredients...you can use a crock pot as well.

I placed a cast iron griddle under my pan to diffuse the heat and warm on low heat for about 2 hours. It will reduce a bit and thicken up. Cool and store in the refrigerator.

This also freezes wonderfully. Portion out into ziploc baggies and remove as much air as you can before freezing.
