Split Pea Soup w Smoked Ham Hock

Using a large size slow cooker / if slow cooker is too small, cook ham bone with 1/2 the vegetables and water, and cook balance of vegetables separately on top of stove till peas have softened - approx. 1 hr. then combine when blending the vegetables. Ingredients

To slow cooker set on low add:
2 Cups - dried split peas (rinsed)
2 Med Onions - chopped
2 Large Carrots - chopped
2 Large Celery Stocks - chopped
1 Clove of garlic
1 1-1/2 Lb Smoked Hock (with bone)
8 Cups Water
1 Whole Bay Leaf
Cover and let cook on low for 24 hours
Tips
Total Calories 2,116 - divide by # servings created = #calories per serving
Directions
After soup has cooked for 24 hours, let cool to room temperature.
Remove ham bone from pot
Place vegetables in blender and puree
Remove skin and excess fat from ham bone
Chop meat into bite size pieces and return to blended vegetables - mix well, measure into 1 - 2 cup serving (see note at bottom regarding calories / serving) size in zip lock bags/plastic containers and freeze.
Note: When soup cools, it will thicken up.
To serve place in pot/microwave dish - heat in micro wave for 5 minutes / in pot till reaches boiling point.
