Delicious snack cake! I made this for my cycling club and it was wiped out in minutes with people going back for seconds and thirds. This is my Cream Cheese Frosting recipe for this snack cake. Ingredients

2 cups canned pumpkin
1/2 cup unsalted butter
1/2 applesauce, unsweetened
4 eggs
1 cup white sugar
1 cup brown sugar, not packed
2 cups all-purpose flour
2 tsp baking powder
2 tsp baking soda
2 tsp salt
2 tsp ground cinnamon
1 tsp ground ginger
1/4 tsp nutmeg
1 cup chopped walnuts (optional, not included in nutritional data)
Tips
I used half a batch of frosting and swirled a line down the center of each bar.
Directions
1. Preheat oven to 350 degrees F. Grease two 9 x 13-inch pans or one tall-sided cookie sheet.
2. Combine the flour, baking powder, baking soda, salt, and cinnamon and set aside. In a separate bowl, mix the pumpkin, butter, applesauce, eggs, and sugar. Add the flour mixture and stir just until combined. Mix in the walnuts.
3. Spread the batter into the prepared pan and bake in preheated oven until a toothpick inserted in the center comes out clean, 20-25 minutes. Cool on wire rack.
4. Cut into 24 bars and frost bars with Cream Cheese Frosting.
