IntroductionThis is a Makeover to Quinoa con pollo (Chicken Pilaf). I found that Recipe on SparkPeople, but just happened to have Stew Beef defrosted, so I used it. 735 grams Stew Meat - Supertrim SS 4 oz - 112 g,
4 cups Water, tap,
1/4 cup *Dried Onion Flakes
250 grams Carrots, raw,
123 grams Tomatoes,
1 Anaheim Pepper, 67 gram(s)
2 cloves Garlic,
1 tsp NoSalt, Sodium Free Salt Alternative,
1 tbsp Cumin seed,
1/4 tsp Pepper, black,
1.5 cups Quinoa,
I added a Tablespoon of Salsa to my Dish. Hubby opted for Ranch Dressing.
Add to cooking water remaining in pot:
Carrots chopped into small pieces, dried Onions, chopped Anaheim Pepper, minced Garlic Spices quinoa and beef cubes.
Cook over high heat until the mixture comes to a rolling boil. Turn heat to low and cook for about 20 minutes or until all liquid has been absorbed.
Serving Size: Makes 8 Servings of about 200 grams
