Sweet Mushrooms, Peas, Blended Veggies, and Chicken

Ingredients

    2 boneless skinless chicken breasts
    1 t. extra virgin olive oil
    1 med. onion, chopped
    8 oz. fresh white mushrooms, sliced
    10 oz. pkg. frozen peas
    4 oz. california blend frozen vegetables
    1 pkg. (1 serving) sweet n' low
    1 tsp. thyme
    Salt and pepper to taste

Directions

Cuts breasts into 1 inch pieces. Heat 1 T. extra virgin olive oil in large skillet; add chicken and cook 8-10 minutes until cooked through.
While chicken is cooking, chop onion and slice mushrooms. Microwave frozen vegetables 5 minutes. Add vegetables to chicken in large skillet. Season with sweet n' low and thyme. Cook 20 more minutes til seasonings are incorporated and heated through.

Serving Size: Makes 4 2 cup servings
