1 medium onion, chopped 2 garlic lcoves, minced 2 tsp olive oil 3 cups vegetable broth or reduced-sodium beef broth 1 can (15oz) black beans, rinsed and drained 1 can (14.5oz) diced tomatoes 1 cup picante (salsa) 1 cup uncooked spiral pasta 1 small green pepper, chopped 2 tsp chili powder 1 tsp ground cumin 1/2 cup shredded reduced-fat cheddar cheese 3 tbsp reduced-fat sour cream
In a large suacpan, saute onion and garlic in oil until tender. Add the broth, beans, tomatoes, salsa, pasta, green pepper and seasonings. Bring to a boil, stirring frequently. Reduce heat; cover and simmer for 10-12 minutes or until pasta is tender, stirring occasionally. Serve with cheese and sour cream.
