Skillet Breakfast

Introduction

I like to have this meal right after a good workout in the gym I like to have this meal right after a good workout in the gym
Number of Servings: 3

Ingredients

    1 medium red potato w/skin diced
    3 lge eggs
    *2 oz of ham, diced or chopped (I like Hormel because it is low in fat)
    *1 smoked sausage, chopped (I use Johnsonville 50% less fat-but any sausage will do)
    1 tbs Fleischmann's w/olive oil
    1 oz shredded cheese (I will use what I have on hand)
    1 tsp olive oil

    *Note* you can use any type of meat that you care to, I have used leftover baked chicken breast or steak, I've even used leftover pork tenderloin.....it's your choice

    Makes 2 adult servings or 3 childrens servings

Tips

I like to add a side of cheese grits and pancakes


Directions

Use olive oil to fry potatoes until cooked, remove and set aside

In same skillet, cook meat, remove and add to potatoes

In skillet add 1 tbs Fleischmann's and melt on low to medium heat

In small bowl mix eggs, add to skillet do not stir or scramble cook until bottom as formed like a pancake, add potatoe and meat mixture cover for 5 mins on low and continue to cook until egg is done, last, sprinkle shredded cheese over top and cover a few minutes until cheese has melted

Now serve
