Lentil "Falafel"

Introduction

I made this when I was in the food for falafel but didn't have any chickpeas on hand, and was delighted to discover that these are lower in calories and higher in fiber than the traditional version! Beware, though: these are much softer than regular falafel, so probably won't be popular with people who can't stand "mushy" foods. Number of Servings: 4

Ingredients

    1 cup dried lentils, cooked (about 3 cups cooked lentils)
    1/2 cup chopped cilantro
    1/2 cup chopped onion
    2 cloves garlic, finely chopped
    1 egg
    1/2 tsp ground cumin (or more to taste)
    salt to taste
    A little oil to prevent sticking in pan, if needed (not included in calorie count)

Tips

These are great in whole wheat pita with lots of chopped tomatoes and tsatziki (tahini is also nice, if you have any)!


Directions

Mash up the cooked lentils with a fork, then combine with other ingredients. Shape mixture until balls and fry briefly in nonstick frying pan, until brown on each side. Remove to baking sheet and bake in 400 degree oven until fragrant and cooked through (about ten to fifteen minutes).

Serving Size: Makes four servings: about three balls each
