Introduction

The cuisine says "Asian" but I don't know any Asians that have made this. It just has an Asian-y taste to it because of the ginger and toasted sesame oil. Ingredients

    4 boneless, skinless chicken breasts, cut into cubes
    1 can mandarin orange segments in light syrup-do not drain
    1.5 cups apples, chopped into small cubes
    .5 cup diced cooking onions
    2 tbsp toasted sesame oil
    2 tbsp e.v.o.o.
    1/4 cup cider vinegar
    1/4 cup moderage quality balsamic vinegar
    1 tbsp fresh ground ginger OR 1 tsp dry ginger
    1 tbsp onion powder
    1 tbsp garlic powder
    .5 tsp allspice
    1 tsp salt
    1/4 cup honey
    1/4 cup brown sugar
    (optional) 1 tsp crushed red pepper flakes

    3 tbsp corn starch dissolved in half cup cold water

Tips

Serve with rice or lo mein noodles.


Directions

Heat the olive and sesame oil in a medium/large pot. Sautee the onions and apples until the onions are soft. Add the chicken and the seasonings, sauteeing the chicken until it is mostly cooked through. Add the oranges with the light syrup, the honey, the brown sugar, and the vinegars. Reduce heat to medium-low and let simmer until it has reduced by 1/3, stirring often to avoid scorching. Add the corn starch water, and cook an additional 3-5 minutes, until thickened.

Serving Size: Makes 8 one and a half cup servings
