Supreme Scalloped Potatoes

Ingredients

    8 medium potatoes, sliced
    2 1/2 cups shredded cheddar
    1/2 large onion, sliced thin
    1 can 98% fat free cream of chicken soup
    1 cup reduced fat sour cream
    3/4 cup skim milk
    2 Tbl butter or margarine, melted
    1/2 tsp salt
    1/2 tsp pepper

Directions

Slice potatoes in food processor. Put in large mixing bowl with sliced onions.

In a separate bowl, mix 1 cup of shredded cheese with remaining ingredients. Pour mixture over potatoes and mix well with spatula.

Pour 1/2 the potato mixture into a large prepared casserole (I like a large shallow one). Sprinkle 1 cup of cheese over, and top with remaining potato mixture. Bake in 350 oven for 1 hour.

Remove from oven and sprinkle remaining 1/2 cup of cheese on top. Return to oven for 10-15 more minutes, until cheese is completely melted.
