Introduction

My grandmother makes this recipe using fresh cucumbers from her garden. My grandmother makes this recipe using fresh cucumbers from her garden.
Number of Servings: 8

Ingredients

    4 medium Cucumbers (peeled)
    1 white onion chopped
    1 cup distilled apple cider vinegar
    1/2 cup granulated white sugar

Directions

Place 1 cup distilled apple cider vinegar in a sauce pan. Add 1/2 cup granulated white sugar to the vinegar and heat to boiling, stirring until all the sugar has dissolved. Boil mixture for one minute, then remove from heat.

While vinegar mixture cools slightly, thinly slice the cucumbers. Place sliced cucumbers in a bowl. Chop 1 white onion and add to cucumbers.

Pour vinegar/sugar mixture over cucumbers/onions and stir gently to mix ingredients. Cover bowl with lid or plastic wrap and refrigerate for at least 4 hours, although overnight is better. When ready to serve, remove bowl from refrigerator, gently stir and serve. Makes 8+ 1/2 cup servings.
