Crystal's Vegetable and Rice Soup

Introduction

Easy to throw together with pantry and freezer staples. Easy to throw together with pantry and freezer staples.
Number of Servings: 12

Ingredients

    1 quart chicken broth, homemade, no added salt, defatted
    1 pint diced tomatoes, frozen, no added salt
    1 cup canned spaghetti sauce
    1 Tbsp olive oil
    1 small onion, chopped
    2 cloves garlic, chopped
    1 can mixed vegetables, no salt added
    1 Tbsp Italian seasoning
    1 tsp oregano
    3 cups cooked brown rice

Directions

Saute onion and garlic in olive oil in soup pot until starting to turn translucent, about five minutes. Add remaining ingredients, except for rice, to the pot. Bring to boil, reduce heat, simmer 20 minutes. Add cooked rice and serve.

Serving Size: makes 12 1-cup servings
