Introduction

Number of Servings: 4

Ingredients

    4-5 sprays Pam butter flavor
    1 Med. Bell pepper (Red has the best flavor).
    1 Lrg. Onion.
    8 oz. Fresh Mushrooms
    1 lb. chicken, boneless/skinless, all fat removed, cubed
    5 cloves garlic
    1/2 cup chicken broth, low sodium
    1/2 cup sour cream, low fat
    1 tsp. garlic powder
    1 tsp. black pepper
    1 Tbsp. Dill (dried)

Tips

This can be served over whole wheat noodles, rice, or baked potatoes (NOT included in calorie count).


Directions

-Spray large skillet with cooking spray.
-Over med. heat, cook peppers, onions and mushrooms until soft and just starting to brown.
-Add chicken and fresh garlic. Cook until chicken is cooked through.
-Add garlic powder, black pepper, and dill.
-Mix thoroughly and then add chicken broth.
-Let simmer for about 8 minutes.
-Add sour cream.
-Stir thoroughly and remove from heat.

Serving Size: Makes Four One Cup Servings - OR - Six 2/3 cup servings.
